Hummus tuna-less salad prepared with fresh ingredients is healthy, satisfying fuel and perfect for hot summer days. This vegan version uses Roots lima bean hummus, produced in Asheville, North Carolina, in place of mayonnaise. Creamy lima bean hummus infused with fresh herbs creates a delightful background for flavors from capers and dill. Mashed garbanzo beans and kelp powder or kelp granules are a great substitute for the tuna. Kelp granules can be found in Asian markets and in the international aisle or bulk section of specialty grocers. We recommend serving hummus tuna-less salad with slices of ripe summer tomato, if available. This recipe makes 2 servings of salad, or enough for 2-3 sandwiches.

Ingredients

1 cup garbanzo beans, drained and mashed well with a fork, and 3/4  teaspoon kelp powder or kelp granules

  • 3 tablespoons Roots lima bean hummus
  • 1/4 cup celery, finely diced
  • 2 tablespoons green onions, finely diced
  • 2 tablespoons fresh dill, finely diced
  • 1 tablespoon capers, coarsely chopped
  • Pepper to taste
  • 2 slices tomato
  • 1 cup arugula, romaine or spring lettuce mix
  • 2 slices fresh bread (optional)

Preparation

  1. Combine mashed garbanzo/kelp mixture with celery, green onions, fresh dill, and capers in a medium bowl and mix well.
  2. Stir in 3 tablespoons Roots lima bean hummus until well-combined with other ingredients. Add more lima bean hummus if you prefer that the salad be creamier.
  3. Serve on top of fresh arugula or lettuce with sliced tomato on the side. Or assemble as a sandwich with lettuce and tomato.
